Granulated Maple Sugar is a pure maple product, where the syrup is boiled to 260F, and stirred until it granulates to sugar. It is then put through a sieve to separate the fine sugar from the small nuggets. Maple sugar was the only form of sugar available in Canada until the late 1800’s. Many women would make hard blocks of maple sugar by putting it in a mold or pan before cooling (it was not stirred) and a hard “cake” of maple sugar was created. It would be easy to store and transport. When needed, it would be shaved or grated off to be used.
Maple sugar has so many uses! It can be substituted anywhere you would use white or brown sugar. It can be sprinkled on as a topping, it is delicious on steel cut oats or porridge. One of our favorites is to sprinkle it on a fresh fruit, (apple, strawberries) or fruit salad. It’s perfect for baking, sauces, spice rubs, or on top of your morning oatmeal.
